Cooking recipes - How to make Sweet potato puree?

Just like turkey, or stuffing, mashed sweet potato is an integral part of any self-respecting Thanksgiving... Americans wouldn't consider celebrating Thanksgiving without this sweet side dish, and this tradition dates back to the late 1700's.

To be fair, neither mashed potatoes nor sweet potatoes were part of the first Thanksgiving in history, in 1621... It was not until 150 years later, in the late 1700s, that the first traces of the sweet potato appeared in Thanksgiving recipes. At first, there were plenty of pumpkins, but no sweet potatoes in sight, since the first Thanksgiving meal took place in Boston, Massachusetts, a place not known for growing potatoes! The Indians were already eating sweet potatoes in the south of the USA, since this starch grows really well in a warm and humid climate, but they had not yet brought it north at that time.

At the same time, in the mid-1700s, mashed potatoes were THE dish of the day because white potatoes were easy to produce, cheap and very filling. It appeared at the Thanksgiving table in 1747, and was cooked with butter, milk, salt and cream. About fifty years later, around 1800, the sweet potato was democratised in the United States and the recipe for sweet potato puree became obligatory on the Thanksgiving table, as did turkey or pumpkin pie.

Ingredients:

  • 60 g de beurre doux
  • 30 g de crème fraîche épaisse
  • 3 g de sel
  • 6 g de sucre en poudre
  • 500 g de patates douces
  • Sel et poivre pour assaisonnement

Steps for making Sweet potato puree:

Cooking recipes - How to make Cranberry sauce?

If you are cooking the traditional capon, I suggest an original accompanying sauce, a cranberry and orange sauce. It is a perfect accompaniment to all poultry, but also to game.

Ingredients:

  • 400 g fresh cranberries
  • 2 oranges
  • 50 cl apple juice
  • 1 teaspoon of cinnamon

Steps for making Cranberry sauce:

  1. Take the juice from the 2 oranges.
  2. Mix all the ingredients in a saucepan. Heat and cook for about 15 minutes over medium heat. Stir regularly to prevent the mixture from sticking.
  3. When the sauce has reduced to a compote, remove from the heat and put it in a small pot.
  4. Serve with a turkey.

How to celebrate your first Thanksgiving in the USA?

How to celebrate your first Thanksgiving in the USA?

Thanksgiving is arguably the most celebrated day in the United States and perhaps the most important dinner of the year. But for anyone studying or in the United States on the fourth Thursday in November it can be a completely foreign holiday. Here are the things you need to know before you sit down to dinner.

What are we celebrating?

Thanksgiving is a holiday that celebrates close family and friends and the autumn harvest. At the heart of this holiday is a deep sense of gratitude. As the name implies, it is a day for "giving thanks".

The history of Thanksgiving

In the absence of any historical consensus on the exact location or date of the first Thanksgiving meal on American soil, the celebration of the holiday is most often considered to have taken place in 1621, in what is now Plymouth, Massachusetts.

The story goes that after the Mayflower arrived at Plymouth Rock on 11 December 1620, the Pilgrims (British separatists) lost 46 of their 102 settlers. However, with the help of the Wampanoag Indians, they learned to farm their land and survive the cold of their first winter in the New World. The summer of 1621 produced a bountiful harvest. To celebrate the event, a traditional English (or more likely Native American) three-day harvest festival was held to commemorate this magnanimous event.

What's on the menu for Thanksgiving dinner?

Turkey

For most non-vegetarian families, turkey is a big part of the Thanksgiving feast. Whether roasted, smoked, brined or fried, achieving the perfect blend of crispy skin on the outside and tender meat on the inside is an art. ⇒ Recipe for making thanksgiving turkey

Stuffing

Before you even put the turkey in the oven, you'll need to stuff it with cornbread, onions, celery and dried cranberries. After a few hours of cooking inside the turkey, this sweet-tasting "stuffing" will become deliciously tender and juicy.

Cranberry sauce

Cranberry sauce, with its sweet and sour undertones, brings out the salty, juicy flavour of the turkey, much like an Indian condiment.

From gravy to gravy

Once you've removed the turkey from the oven, it's time for gravy. Made from the leftover gravy at the bottom of a pan, this thick turkey gravy can generously accompany almost any dish at Thanksgiving dinner.

Mashed potatoes

What other dish could go with this gravy? Topped with a juicy gravy, mashed potatoes are perhaps the most delicious (and hearty) dish on the Thanksgiving dinner menu.

Pumpkin pie

homemade pumpkin pie is the ultimate Thanksgiving dessert. However, after a second or even third plate of turkey and potatoes, it is perhaps the most difficult dish to finish. But don't panic! If you don't finish your share at dinner on Thursday, you can still enjoy it at breakfast the next morning.

How is Thanksgiving celebrated?

Now that you know a little more about the history of Thanksgiving, let's move forward a few centuries to look at modern Thanksgiving. Here's a Thanksgiving Day schedule:

  • 9:00 - 10:00 am  - Watch the Macy's Thanksgiving Day Parade

Watch it live on TV or find a spot on the street from which to watch the helium balloons, floats and bands march through the streets of New York.

  • 10 am - 12 pm - Shopping

For employees, Thanksgiving, like most holidays in the United States, is either a holiday or a half day of work. Luckily, supermarkets are usually open in the morning, so make sure you get there early enough to select all the ingredients you need to start cooking.

  • 12:00 - 13:00 - Watching the Presidential Turkey Grace

Yes, you read that right, since the middle of the 20th century, the President of the United States has made a practice of "pardoning" one or two Thanksgiving turkeys each year, allowing these birds to escape slaughter.

  • All Day - Watching American Football

Thanksgiving Day football games are an integral part of the American holiday. It's a great opportunity to cheer on your favourite team and take your mind off things, even though you'll most likely skip lunch. After all, you'll be feeling pretty hungry when it's time for dinner.

  • All day cooking, cooking and more cooking

Preparing the Thanksgiving meal can take hours or even days, depending on the complexity of the dishes and the number of guests. The turkey alone requires at least 20 minutes of cooking time per pound - the largest birds can spend up to five hours in the oven.

  • 18:00 - 22:00 - Eating beyond human limits

It's probably not surprising that an American holiday is all about eating, but it is legitimately surprising how much you can actually eat if you put your mind to it.

Cooking recipes - How to make thanksgiving turkey?

You must surely be wondering how you are going to cook the turkey you are going to serve to your guests for this Thanksgiving!

Indeed, the turkey is the true symbol of this celebration, consumed by Americans on this occasion for hundreds of years... But beware, making the perfect turkey for Thanksgiving is not an easy task, far from it! You'll have to be patient to get the congratulations of your friends and family for your turkey.

If you have ever celebrated Thanksgiving in the United States, you know that a good turkey must be tender and juicy, even if it weighs more than 8 kilos... A real challenge!

To achieve this feat, the bird must be prepared and waited for at least 12 hours, and then cooked for almost 4 hours! On this subject, make sure that your oven is big enough to accommodate the turkey before you buy it... It would be a shame to have to throw the turkey away because the oven is too small, or not be able to cook it properly, wouldn't it?

Ingredients:

  • A 8 kilo turkey
  • 115gr butter
  • 500gr salt
  • 2 carrots
  • 1 onion
  • 2 stalks of celery
  • 2 sprigs of thyme
  • 1 bay leaf
  • White wine
  • Stuffing

Steps for making thanksgiving turkey:

  1. The night before you plan to cook your Thanksgiving meal, wash the turkey and gut it to remove the giblets.
  2. Then rub the turkey with salt before placing it in a container large enough to cover.
  3. Cover the turkey with water and season with pepper, thyme or rosemary to taste.
  4. Place the turkey in the refrigerator overnight.
  5. On the day of your meal preparation, remove the turkey from the container and wash it again before letting it dry out completely. Meanwhile, preheat the oven to 175 degrees Celsius.
  6. Once the turkey is dry, turn it over, breast side down, and place it in the oven dish.
  7. Melt about 60 grams of butter and brush the turkey with the melted butter, then stuff the turkey with the stuffing.
  8. Before putting the turkey in the oven, tie up its legs and fill the dish with all the vegetables cut into small pieces. If you want more flavour, you can add a glass of white wine to flavour the vegetables at this point.
  9. Put the turkey in the oven and bake until the inner temperature of the turkey reaches about 85 degrees Celsius.
  10. At about 2 hours 45 minutes, turn the turkey over, being careful not to break it open (which would be a disaster for your stuffing), and brush the breast with the remaining melted butter (about 60 grams).
  11. Depending on the weight of your turkey, it will take another 1 hour or 1.5 hours of cooking before you can remove the turkey from the oven.
Wait at least 30 minutes before carving.
